Shop-bought egg replacers

There are different brands of egg replacers to choose from. You can buy them in health food stores and some supermarkets also sell them.
When choosing which one to use, check out their ingredients list to see if they are suitable for your diet. For example, some may contain sugar and casein. Some substitutes even contain egg!
I have used Orgran’s No Egg natural egg replacer and found it satisfactory. For example, I tried it in my curd cheese patties and it worked well (instructions for using an egg replacer instead of egg are included in the Substitutions section at the end of the recipe).
Shop-bought egg replacers are ideal, for instance, when making cakes, cookies and muffins. They are quick and easy to use – just follow the instructions on the packet.
Unlike some heavier egg substitutes, such as yogurt or tofu, shop-bought egg replacers are better suited for making airy cakes. However, if you’re concerned that your cake might not be fluffy enough, add a little extra baking powder or bicarbonate of soda (baking soda).
If the eggs in the recipe are meant to bring moisture into your sweet treat, add a little more liquid than what’s indicated in the instructions when you’re preparing the egg replacer. You could use water, milk, almond drink or whatever liquid suits the recipe. Sometimes adding a little oil works.
Whenever you’re substituting ingredients in a recipe, you’re in unknown territory. With eggs, there are not hard and fast rules. So have fun and experiment with what works for you!
